"猫" alone can mean either "cat" or "a cat" or "cats". If you wish to say a pack of cats (any number of them), you could use "達" or "-tachi" - that would make "猫達" or "nekotachi".
So two cats would be "二匹猫" or "nihiki neko", three cats are "三匹猫" or "sanbiki neko", four cats are "四匹猫" or "yonhiki neko", five are "五匹猫" or "gohiki neko"...

I can answer this if you like.
Tons of Japanese words create plural by using "counters" i.e. a grammatical form. There are counters for cars, pieces of meat, houses, flat thin objects (money, bills and etc.)... The list goes on and on. There's a counter especially for animals (small ones), and that is 匹 or "hiki". Therefore, one cat is "一匹猫" or "ippiki neko". You wouldn't use this (one cat) unless you want to point out that there's only ONE cat.

You wrote " ... ni aru da yo" ; I believe this is grammatically incorrect. However you could say " ... ni aru n da yo".

My question is, how do you make words in Japanese plural? Like, "neko" is cat. But, how do you say "cats"? Surely, it's not adding an "s" ;)
